The taste has a medium fruitiness of green olives, which contrasts well with the bitter, derived from olive tree leaves and wild herbs. There are retro-olfactory sensations of almonds and thistle.
Use Poggio Grimodi Olive Oil fresh from container as it enhances and strengthens the tastes of legumes and vegetables, and complements well with the aromas of meat and vegetable-based condiments. It goes excellent with particular recipes based on Nebrodi cheeses such as provolone and canestrato.
